2 chicken breastschicken-breast
1 tablespoon sesame oilsesame-oil
3 slices baconbacon
300 g Baby Spinach, washed (pat dry)spinach
1 cup bean sproutsbean-sprouts
1/2 red pepper, thinly slicedbell-pepper
1/2 cup roasted unsalted cashewscashew
1 small red onion, slicedred-onion
1/4 cup raisinsraisins
1 cup crisp fried Chinese noodlesnoodle
2 tablespoons soy saucesoy-sauce
1 tablespoon lemon juicelemon-juice
1 teaspoon finely grated lemon, zest oflemon
1 tablespoon honeyhoney
1 clove garlic, crushedgarlic

Instructions (7 steps)

01Brush the chicken breasts with a little oil and cook in a hot pan for 5 minutes on each side, until the chicken is cooked through, without overcooking

Remove the chicken and set aside

03Cook the bacon until crisp in the same pan

04slice the chicken into thin strips and roughly chop the bacon

05Toss together the chicken, bacon, spinach, sprouts, red pepper, raisins, cashews, red onion and noodles

06Whisk the dressing ingredients in a small saucepan and warm gently to dissolve honey

07Drizzle the dressing over the salad and serve
