How to freeze sweet corn without blanching the corn and requiring to cut corn off of hot cobs and instead making a simple sugar and salt brine to freeze the corn in is the way I grew up freezing sweet corn.

Ingredients (4)

serves

10 cups sweet corn (cut off the cob)
3 cups waterwater
6 teaspoons sugarsugar
3 teaspoons saltsalt

Instructions (4 steps)

01Place two cups of corn in quart-sized freezer bags.
02Heat water and add salt and sugar. When salt and sugar are dissolved, remove from the heat.
03Pour 1/2 cup of brine in each bag of corn.
04Place in freezer immediately.
