This spicy filling is perfect for stuffed peppers. I cheat and use Zatarains Dirty Rice Mix, works well with any Dirty Rice recipe.

Ingredients (9)

1 lb extra lean ground beefground-beef
2 garlic clovesgarlic
1 cup red onionred-onion
1 cup celerycelery
6 cups dirty rice mix, prepared (includes ground beef mentioned above)dirty-rice-mix
1 eggegg
2 tablespoons hot pepper sauce (I use Frank's Red Hot)pepper
1 1/2 cups mozzarella cheese, shreddedmozzarella
6 bell peppers, hollowed and caps removedbell-pepper

Instructions (13 steps)

06Prepare peppers by coring, removing seeds and cuting off tops (level the bottoms of any uneven so that they stand upright on their bottoms).

07Beat egg with Frank's Red Hot sauce and add 1 cup cheese to egg mixture.

08Add egg mixture to dirty rice/beef mixture.

09Stuff each pepper to the top with meat and rice mixture, and place in glass baking dish.

10Cover loosely with Alumnium Foil.

11Cook in oven for 25 minutes.

12Remove from oven, uncover and top each pepper with remaining cheese. Bake uncovered for an additional 10 minutes.

13When finished, remove from oven and let sit 5 mins before serving.
