1 1/4 lbs boneless skinless chicken thighs, cut into 1 inch piecesboneless-skinless-chicken-thighs
2 garlic cloves, finely choppedgarlic
2 (15 ounce) cans white hominy, drained and rinsedhominy
1 medium onion, choppedonion
1 teaspoon dried oreganooregano
1/2 teaspoon cumincumin
1/4 teaspoon dried red pepper flakesred-pepper-flakes
2 chicken bouillon cubeschicken
4 cups waterwater
1 (14 1/2 ounce) can diced tomatoes with green chilies (such as Rotel)tomato
1 tablespoon lime juicelime-juice
1/4 teaspoon saltsalt
1/4 teaspoon pepperpepper

Instructions (2 steps)

01Combine chicken, garlic, hominy, onion, oregano, cumin, red pepper flakes, bouillon cubes and water in a slow cooker. Cover and cook on high for 3 hours or on low for 5 hours.
02Remove cover and stir in tomatoes, lime juice, salt and pepper until warmed through. Serve immediately.
