2 large sweet potatoes, peeled, cut half lengthwise, then sliced into 1/2 inch slicessweet-potato
2/3 cup dried apricot, cut into quartersdried-apricot
2/3 cup prune, cut quarters
1/2 cup orange juiceorange-juice
1/4 cup honeyhoney
1 tablespoon lemon juicelemon-juice
1 teaspoon vegetable oilvegetable-oil
1/2 teaspoon ground cinnamoncinnamon
1/16 teaspoon ground clovesclove

Instructions (6 steps)

01Preheat over to 400 degrees.
02Lightly oil an 8 inch square baking pan or spray with nonstick cooking spray.
03Place sweet potatoes in prepared pan and sprinkle with salt and pepper. Bake uncovered , until just tender, stirring several times, about 30 minutes.
04While sweet potatoes are baking, place apricots and prunes in a small heatproof bowl and cover with boiling water. Let stand for 30 minutes. Drain.
