This is the closest I could get to Bertucci's sausage soup. I find that the quality of the sausage meat you use is critical in the recipe and try to use better sausage whenever I can.

1 lb italian sausage meat, broken upsausage
28 ounces canned diced tomatoes (plain or with Italian herbs)
6 ounces tomato pastetomato-paste
6 ounces frozen spinach (or equivalent amount of canned or fresh)spinach
1/2 cup white ricewhite-rice
1 medium onion, choppedonion
1 tablespoon olive oilolive-oil
1/2 tablespoon butterbutter
8 cups waterwater
salt and black pepperpepper

Instructions (8 steps)

01Sautee the onion in oil and butter until soft.
02Add the sausage meat and stir-fry until no longer pink on the outside.
03Add the tomato paste and cook for 2 minutes, stirring constantly.
04Add the water and bring to boil.
