2 large field fresh tomatoestomato
1 teaspoon sugarsugar
1 teaspoon coarsely ground saltsalt
1 teaspoon coarsely ground pepperpepper
1 tablespoon white wine vinegar or 1 tablespoon good balsamic vinegarvinegar
1 tablespoon extra virgin olive oilextra-virgin-olive-oil
6 slices red onion rings, paper thin sliced
6 teaspoons of fresh mint, choppedfresh-mint

Instructions (6 steps)

01Slice each tomato into 3 thick slices, arrange on shallow serving platter.
02Season each slice with sugar, salt and pepper.
03Drizzle with wine vinegar and olive oil.
04Let stand at room temperature for 1 hour.
05At serving time, add paper thin onion slices.
