4 medium oranges, peeledorange
1 small red onion, sliced thinred-onion
2 tablespoons raspberry vinegar (or fresh lemon juice)raspberry
6 tablespoons extra virgin olive oilextra-virgin-olive-oil
1 dash salt, to tastesalt
1 dash pepper, to tastepepper
4 tablespoons golden raisins (soaked, covered in hot water for 20 minutes, then drained)
20 black olives, pittedblack-olives
2 tablespoons sunflower seedssunflower-seeds
2 tablespoons almonds, blanched, chopped finealmond
4 sprigs of fresh mint, for garnishfresh-mint

Instructions (5 steps)

01Remove white pith from oranges & cut the fruit crosswise into 1/4-inch slices.
02Arrange on a serving platter & scatter the sliced onion over the orange slices.
03In a small bowl, whisk together vinegar, olive oil, salt & pepper, then spoon this dressing over the slices of onion & orange.
