16 ounces dried black-eyed peasblack-eyed-peas
1 cup chopped celerycelery
1 cup chopped oniononion
1 cup chopped carrots or 1 cup chopped bell pepper (may mix)carrot
5 cloves garlic, mincedgarlic
1 -2 bay leafbay-leaf
1 lb andouille sausages or 1 lb kielbasa, cut into chunkskielbasa
1 teaspoon saltsalt
1/4 teaspoon black pepperpepper
1/4 teaspoon cayenne pepperpepper
1 tablespoon cajun spices or 1 tablespoon spice essenceessence
49 1/2 ounces chicken broth (large can)chicken
cayenne pepper sauce or Tabasco sauce, to tastecayenne

Instructions (5 steps)

01Sort peas and soak in plenty of water overnight.
02Before cooking, drain and rinse.

Place all ingredients into crock pot and cook on low for 8-10 hours or until peas are nicely tender.

04Remove bay leaves before serving.

05Serve with additional tabasco, if desired.
