1 cup butter, softenedbutter
3/4 cup light brown sugar, packedbrown-sugar
2 teaspoons fresh lemon juice or 2 teaspoons lemon extractlemon
lemon, zest oflemon
2 cups sifted flourflour

Instructions (8 steps)

01Preheat oven to 325 degrees.
02In a large bowl, cream butter and sugar with electric mixer.
03Scrape sides of the bowl.
04Add lemon juice, zest and flour and mix thoroughly on low speed.
05Shape level tablespoons of dough into logs on ungreased cookie sheet.
06Bake 15-20 minutes until cookie spreads and is very light brown in color.
07Cookies may be dipped in soft lemon frosting or melted chocolate on one end.

08Chill to set chocolate or frosting.
