This is a yummy winter dessert. My all time favourite. The mix magically seperates during cooking, leaving a light fluffy pudding with sweet tangy sauce! I guarantee you'll make it again and again. All measurements are in metric.

4 eggs, seperatedegg
1 cup caster sugarsugar
30 g butter, meltedbutter
3 tablespoons plain flourflour
2 teaspoons grated fresh lemon rindlemon
1/3 cup lemon juicelemon-juice
1 cup milkmilk

Instructions (7 steps)

01Place egg yolks in a large bowl.
02Add sugar and stir till smooth.
03Add melted butter, flour and lemon rind, then stir in juice and milk.
04Beat egg whites until soft peaks.
05Gently fold into yolk mix.
06Pour mixture into a well greased, deep oven proof dish.
07(I use a souffle dish!) Bake 170 degrees celcius for 40-50 minutes.
