2 -3 large boneless skinless chicken breastschicken-breast
2 tablespoons Dijon mustarddijon-mustard
2 teaspoons lemon pepperpepper
1 (400 g) can apricot halves (in natural juice)apricot
1 teaspoon chicken stock powderchicken
2 tablespoons chopped fresh parsleyparsley

Instructions (10 steps)

01Cut chicken in half lengthways and spread each piece with mustard.
02Place chicken in a single layer over the base of an ovenproof dish.
03Sprinkle the lemon pepper over the chicken.
04Drain the apricot halves, reserving the juice.
05Mash apricots and place over chicken.
06Mix reserved juice and chicken stock together.

07Pour over chicken and cover.

08Bake at 350F for 40-50 minutes (or until cooked through).

09Serve with egg noodles or rice.

10Sprinkle parsley over and serve.
