1/2 cup all-purpose flourflour
3 tablespoons dried rubbed sagesage
1 tablespoon saltsalt
1 1/2 teaspoons ground black pepperpepper
2 large eggsegg
2 cups finely chopped walnutswalnut
4 trout filletstrout
2 tablespoons butterbutter
2 tablespoons olive oilolive-oil
1 lemon, quartered lengthwiselemon
chopped fresh parsleyparsley

Instructions (12 steps)

01Using fork, stir flour, sage, salt and pepper on large plate to blend.
02Whisk eggs in medium bowl.
03Place walnuts on another large plate.
04Sprinkle trout fillets with salt and pepper.
05Dredge trout in flour mixture, then dip in eggs to coat.

06Press both sides of trout in walnuts to coat.

07Melt 1 TBS butter with 1 TBS oil in each of 2 heavy large skillets over medium heat.

08Add 2 trout fillets to each skillet.

09Cook until coating is lightly browned and trout are cooked through, about 5 minutes per side.

10Transfer trout to plates.

11Squeeze 1 lemon wedge over each fillet, sprinkle with parsley, and serve.
