Coconut-Pineapple Banana Bread
4.5(32)This is a nice "tropical" flavored banana bread. Instead of walnuts, substitute chopped macadamias for a more tropical flavor.

04Set aside.05Place sugar, oil, yogurt and eggs in mixer bowl and beat at medium speed until well blended.06Add banana, vanilla and pineapple.07Mix until blended.08Add flour mixture and beat on low until just moist.09Stir in walnuts and coconut.10Put batter in loaf pan and bake 60-70 minutes or until a wooden pick inserted in center comes out clean.11Cool in pan 10 minutes on wire rack.12Remove from pan and cool completely.13Store in airtight container.
