Ingredients (10)

1 1/2 cups tomatoes, diced (must be ripe)tomato
3/4 cup pineapple, diced (see note)pineapple
1/2 medium red onion, finely chopped -red-onion
1 jalapeno chile, minced (less if you like it mild)jalapeno
1 small cucumber, peeled and diced (about 1 cup)cucumber
3 tablespoons fresh cilantro leaves, choppedcilantro

Instructions (2 steps)

01Combine all of the ingredients in a bowl. Season to taste with salt and pepper.
02Note Whether you start with fresh spears, or canned rings or chunks of pineapple, you should gently chop them to a medium dice.
