1 cup chopped oniononion
1 (14 ounce) can diced tomatoestomato
2 cups chicken brothchicken-broth
1 teaspoon minced garlicgarlic
1 teaspoon thymethyme
1 bay leafbay-leaf
1 teaspoon saltsalt
1/2 teaspoon pepperpepper
4 cups diced potatoespotato
1 1/2 cups sliced carrotscarrot
2 cups chopped chicken breasts (, 1in pieces)chicken

Instructions (6 steps)

01Heat oil in large pot, saute onions for 2 minutes.
02Add next 7 ingredients.
03Bring to a boil.
04Add potatoes, carrots, and chicken.
05Simmer until vegetables are done, about 30 minutes.
