Parmesan Broccoli Balls

This is an excellent hot appetizer, and a particular favorite of mine to serve with any kind of meatballs. These always go fast once they come out of the oven, and are a good way to sneak in some tasty vegetables.

Ingredients (7)

2 (10 ounce) packages frozen chopped broccolibroccoli
2 cups herb stuffing mix
1 cup grated parmesan cheeseparmesan
6 eggs, beatenegg
3/4 cup butter, softenedbutter
salt and peppersalt-and-pepper
1 cup parmesan cheese, for rolling inparmesan

Instructions (7 steps)

01Cook frozen broccoli according to package directions; drain well.
02Combine all ingredients, mixing well.
03Pour mixture into a sheet pan and spread evenly; Refrigerate.
04When firm, roll mixture into small (1 inch) balls.
05Roll balls in Parmesan cheese.
06Freeze.
