I wanted something quick and easy to serve with enchiladas and wouldn't require cooking, so I put together this simple salad. We really enjoyed it and hope you do too.

1 avocado, pitted & halvedavocado
1 large tomatoestomato
2 tablespoons sweet onions, chopped fineonion
2 tablespoons cilantro, choppedcilantro
1 tablespoon olive oilolive-oil
1 teaspoon lime juicelime-juice
1/8 teaspoon cumincumin
salt and pepper, to tastesalt-and-pepper

Instructions (5 steps)

01Slice avocado and tomato into 1/4" thick slices.
02Arrange on a serving plate, alternating tomato slices with one or two avocado slices.
03Scatter with sweet onion and cilantro.
04Make dressing by combining olive oil, lime juice, cumin, and salt and pepper and shaking or whisking until well mixed.
05Drizzle dressing over avocado and tomato.
