1/4 cup butterbutter
1 clove garlic, mincedgarlic
1 tablespoon Dijon mustarddijon-mustard
1/2 cup dry breadcrumbsbreadcrumbs
1 1/2 teaspoons grated lemons, zest oflemon
3/4 teaspoon dried basil or 3/4 teaspoon oregano, crumbledoregano
1/2 teaspoon saltsalt
1/4 teaspoon pepperpepper
2 large chicken breast halveschicken

Instructions (8 steps)

01Preheat oven to 375 degrees F.
02Line baking pan with foil.
03Melt butter over low heat and add garlic; saute 1 minute.
04Remove from heat and stir in mustard.
05Mix breadcrumbs, lemon peel, basil (or oregano), salt and pepper on a plate.

Turn chicken in butter mixture to coat, then turn in crumbs, coating completely.

07Arrange skin side up in prepared pan.

08Bake until chicken is cooked through, basting occasionally with leftover butter mixture, about 45 minutes.
