01Put butter in a pan and set to medium heat, or 350 degrees. Melt butter completely.
02Add garlic to melted butter and sauté for 30 seconds to 2 minutes, until the garlic becomes fragrant.
03Add flour and whisk to make a roux.
04Add milk and cream and stir.
05Add cheeses and stir until it begins to melt.
06Continue stirring with a whisk over the heat until it just begins to hit a boil.
