2 lbs potatoes, peeledpotato
3 garlic cloves, finely choppedgarlic
1 onion, finely choppedonion
1 1/2 tablespoons parsley, fresh, finely choppedparsley
3 tablespoons olive oilolive-oil
1/2 teaspoon saltsalt
1/4 teaspoon pepperpepper

Instructions (6 steps)

01Cut the potatoes into rough slices about 1/8 to 1/4" in width.
02Heat the oil over medium-high heat and add the onions and garlic and cook for about 5 minutes over medium heat.
03Now add the potatoes and cook over medium heat for about 20 minutes stirring occasionally until the potatoes are done.
04Be careful not to cook on very high heat as this will brown the potatoes and it is also important not to overcook the potatoes as they will be soft and mushy.
05When done, remove from the heat and strain off the extra oil.
