3/4 c salt (kosher is best, larger granules)salt
1/4 c olive oilolive-oil

Instructions (7 steps)

01Pierce your potatoes with a fork or knife all over to vent (so they don't explode).
02Fill a flat bowl/container with salt.
03Rub olive oil on one of your potatoes and then roll it in the salt.
04Do this to all your potatoes, then you're ready to smoke.
05Set smoker to 250, fill container inside with wood chips of your choice and smoke for 2 hours or until they're tender in the center, test with a knife or fork.
06Allow to rest for a few minutes when you take them out.
07Slice, fill with chili for a main dish or sour cream and butter for a side dish!
