Applesauce Buttermilk Pancakes

• 1-½ cup Unbleached Flourflour
• ½ cups Whole Wheat Flourflour
• ½ cups Brown Sugarbrown-sugar
• 2 teaspoons Baking Powderbaking-powder
• ½ teaspoons Baking Sodabaking-soda
• ½ teaspoons Saltsalt
• 1 teaspoon Cinnamoncinnamon
• ¼ teaspoons Allspiceallspice
• ¼ teaspoons Nutmegnutmeg
• 1 cup Applesauceapplesauce
• 1 cup Buttermilkbuttermilk
• 1 teaspoon Vanillavanilla
• 2 whole Eggsegg
• ¼ cups Butter, Meltedbutter

1. 01Combine all dry ingredients in a medium bowl. In another bowl, combine all liquid ingredients except melted butter. Make a well in the center of the dry ingredients and pour in the liquid ingredients. Stir just until combined. Then stir in the melted butter.
2. 02Cook in a greased or non-stick skillet over medium-low heat until fluffy and golden brown on both sides. Makes about 12 pancakes.
