2 ¼ tsps. of dry yeastyeast
1 tsp. of sugarsugar
1 ¼ cups of warm waterwater
2 ½ cups of flourflour
1 ½ tsps. of saltsalt

Instructions (8 steps)

01Combine warm water, sugar and yeast. Set aside for 10 minutes.
02Add flour and salt, stir to combine, then add a little bit more flour onto a working surface and work the dough with your hands until smooth, for around 10 minutes.
03You can use a dough mixer if you have one.
04Cover the dough with plastic and set aside for 1 hour to rest in a warm place.
05Remove plastic and transfer the dough onto a working surface. Don’t knead it and try to let in as much air as possible! Gather sides of the dough together and pinch them in the middle.
06Generously flour proofing basket or a nice wide plate and carefully transfer the dough ball in it, placing seam side down. Leave to rest for 30 minutes.
