Delicious salad, cool and refreshing. The addition of the feta cheese adds a nice tang. I have used both regular and whole wheat couscous and they are both delicious.

14 ounces chicken brothchicken-broth
1/4 cup waterwater
10 ounces couscouscouscous
1 teaspoon sugarsugar
1/2 teaspoon Dijon mustarddijon-mustard
1 tablespoon lemon juicelemon-juice
1/4 cup red wine vinegarred-wine-vinegar
1/3 cup olive oilolive-oil
8 ounces cherry tomatoes, quarteredcherry-tomato
1 cucumber, peeled and dicedcucumber
3 green onions, sliced thinscallion
3 ounces feta cheese, crumbledfeta

Instructions (11 steps)

01Bring broth and water to boil in a medium saucepan.
02Remove from heat.
03Stir in couscous.
04Cover.

Let sit for 5 minutes.

06DRESSING: Whisk sugar, dijon mustard, lemon juice, and red wine vinegar together.

07Whisk in olive oil slowly.

08Transfer couscous to a large bowl and fluff with fork to separate the grains.

09Add tomatoes, cucumbers, green onion and feta cheese.

10Add dressing and toss.

11Serve at room temperature.
