A classic Southern appetizer served with butter crackers and pickles on the side, pimiento cheese is also delightful to have on hand as leftovers, as it livens up any sandwich. (PS: note that I spelled pimiento as is standard at FN but it does not agree with the spelling in the recipe title.)

3/4 cup mayonnaisemayonnaise
1 tablespoon garlic powdergarlic-powder
1 tablespoon onion powderonion-powder
1 teaspoon celery seedcelery-seed
1 cup pickled jalapenos, choppedpickled-jalapenos
6 ounces piquillo pepper, chopped (regular pimentos can be substituted)piquillo-pepper
5 cups shredded Cheddar (approximately 1 1/4 pounds)cheddar
1 to 2 tablespoons Srirachasriracha

Instructions (1 steps)

01Combine the cream cheese, mayonnaise, garlic powder, onion powder and celery seed. Mix in the pickled jalapenos, piquillo peppers and grated Cheddar. Add the Sriracha and combine. Taste and add more mayonnaise and Sriracha, if necessary. Chill before serving.
