1 quart chicken stock (warmed)chicken
6 ounces lobster tail meatlobster
4 tablespoons sweet butterbutter
1 small onion (finely minced)onion
1 cup arborio rice
salt (to taste)salt
black pepper (freshly ground, to taste)
1/2 cup dry white winewhite-wine
1 tablespoon parsley (fresh, chopped)parsley
parmesan cheese (grated to taste)parmesan
Old Bay Seasoning (to taste)

Instructions (8 steps)

01In sauce pan saute onions in 2 tablespoons butter until tender.
02Add the rice and cook a minute of two, stirring constantly.
03Add wine and cook until absorbed.
04Add stock in stages, stirring until rice is between al dente and tender/creamy.
