Ingredients (6)

1 (15 ounce) can black beans, rinsed and drainedblack-beans
2 (15 1/4 ounce) cans whole kernel corn, drainedcorn
1 cup bottled thick & chunky salsasalsa
5 -6 boneless skinless chicken breastschicken-breast
1 (8 ounce) package cream cheesecream-cheese
1 cup shredded cheddar cheesecheddar

Instructions (9 steps)

01In crock pot, mix together beans, corn, and 1/2 cup salsa.
02Top with the chicken breast, then pour the remaining salsa over the chicken.
03Cover and cook on high 2 1/2 to 3 hours, or until chicken is tender.
04Remove the chicken and cut into bite size pieces.
05Put back into the crock pot.
06Add the cream cheese (cut into cubes to melt faster), and turn to high.

07Heat until cream cheese melts, and blends into sauce.

08Serve over rice.

09Top with shredded cheese.
