6 whole Center Cut Pork Loin Chops (about 1/2" Thick -- I Cut My Own From A Roast)
6 Tablespoons Orange Marmaladeorange-marmalade
1 Tablespoon Canola Oilcanola-oil
2 teaspoons Smoked Salt (or Plain Kosher Is Fine)
Black Pepperpepper

Instructions (11 steps)

01Put two chops in a gallon zip-top bag. Pound each lightly until they are just over 1/4″ thick, then move to a platter or rimmed sheet pan.
02Repeat with the remaining chops.
03Season both sides of each chop with salt and pepper, cover and let sit at room temperature for about 20 minutes.
04Heat the oil in a large skillet over medium-high heat
05When the oil just starts to smoke, add the cutlets.
06Cook them for 90 seconds.
