1 garlic clove, mincedgarlic
1/2 cup chopped oniononion
1 cup chopped tomatotomato
1/2 cup chopped green onionscallion
1/2 teaspoon chili powderchili-powder
2 teaspoons cumin powdercumin
1 (8 ounce) can tomato saucetomato-sauce
1 (16 ounce) can black beans, rinsed and drainedblack-beans
1 tablespoon chopped cilantrocilantro
salt and peppersalt-and-pepper
12 soft corn tortillas
8 ounces low-fat cheddar cheese, shredded, reserve 2 tablespoons (I used fat free)cheddar

Instructions (10 steps)

Cook on medium heat until onion is tender.

05Add tomato sauce and cook 5 minutes more.

06Stir in beans, cilantro, salt and pepper.

07Spray a 9 inch square baking dish with cooking spray.

08Layer 4 tortillas, 1/3 cheese, and 1/3 of the bean mixture; repeat 2 more times.

09Top with reserved 2 tablespoons of cheese.

10Bake 20 minutes, covered, then 10 minutes uncovered or until bubbly.
