This is an adaptation of the soup that the restaurant in my building makes...and the SA's have been wanting me to post it, so here we go..I must warn though -- this is not a measured thing when I make it, so adjust amounts to your taste and have fun!

Ingredients (9)

1 onion, choppedonion
4 -6 large baking potatoes, scrubbed and bakedpotato
2/3 cup butterbutter
2/3 cup all-purpose flourflour
2 -3 cups ham stock (you can also use chicken broth)
3 cups milkmilk
1 -2 cup grated cheddar cheese (must be sharp!)cheddar
1 cup sour creamsour-cream
8 slices bacon, fried really crispy and then crumbledbacon

Instructions (8 steps)

01Cook onion til nearly carmelized Bake taters until tender.
02Cool onion and taters, mash or run through food processor- I use the processor
03Melt butter Whisk in flour and cook over med heat
04Heat milk in separate pan then slowly stir warm milk into flour mixture, whisking
