1/4 cup applewood-smoked bacon, choppedbacon
1 3/4 lbs ground sirloinground-beef
3/4 lb ground porkground-pork
4 large eggsegg
1/4 cup minced jalapenojalapeno
1 tablespoon Worcestershire sauceworcestershire
1 teaspoon fresh ground black pepperpepper
2 teaspoons saltsalt
1/3 cup chopped fresh cilantrocilantro
1 tablespoon toasted ground Mexican oreganomexican-oregano
3/4 cup cubed smoked cheddar cheese
1 cup diced white oniononion

Instructions (5 steps)

01Preheat oven to 325°.
02Partially cook the bacon in an ovenproof skillet over low heat for 5 minutes.
03Do not let the bacon get hard.
04Transfer to a large bowl, add all the other ingredients, and mix very well.

05Put the mixture back into the skillet or into a standard 8-inch loaf pan and bake for 1 hour.
