Add steaks to skillet.
07Cook until seared and well crusted on one side, about 2 minutes.08Turn steaks with tongs, cook 2 more minutes for medium.09Transfer steaks to a plate. Keep warm.10To prepare gravy, pour off all but 4 T cooking oil from pan.11Return pan to medium heat.12Whisk in remaining 4 T flour; cook 1 minute.13Whisk in milk; cook until thick, 3 minutes.14Add more milk if gravy becomes too thick.15Season with salt, pepper, and paprika.16Serve with steak and mashed potatoes.
