My family always requests these muffins. Use any jam you like. I somethimes use this Raspberry peach champagne jam I bought at Sur La Table. This recipe makes 8 good size muffins.

1 2/3 cups flourflour
1/2 cup sugarsugar
2 teaspoons baking powderbaking-powder
1/2 teaspoon saltsalt
1/4 teaspoon cinnamoncinnamon
3/4 cup milkmilk
1 egg, beatenegg
1/3 cup butter, meltedbutter
1/4 cup strawberry jamstrawberry-jam

Instructions (8 steps)

01Preheat oven to 400 degrees.
02Combine dry ingredients in a medium bowl.
03Combine milk, egg and butter.
04Gently stir wet ingredients into the dry ingredients until moistened.
05Spoon batter into greased pans (reserving 1/2 cup for topping).
06Put 1 teaspoon of strawberry jam into each muffin.
