01Preheat the grill to medium heat.
02Pat the chicken pieces dry with a paper towel, then oil them with about a Tablespoon of olive oil, and sprinkle with salt and pepper.
03Mix the 2 Tablespoons of remaining oil, both mustards, maple syrup, parsley, ½ teaspoon salt, and ¼ teaspoon pepper together in a small bowl.
04Grill the chicken over indirect-medium heat for 15-20 minutes, then flip and brush with mustard glaze. Grill another 15-20 minutes and repeat – depending on the size of the pieces, you’ll need about 40 minutes total.
