I found this recipe several years ago on a recipe site on the internet. Of course, that site is not longer around. I have made this several times and no one has ever guessed that it has tofu in it.

1 (10 ounce) package extra-firm silken tofutofu
1/2 cup fresh lemon juicelemon-juice
1 tablespoon lemon peellemon
1/2 cup sugarsugar
1 large egg whiteegg
1 graham cracker pie crust
8 ounces frozen light whipped dessert topping

Instructions (7 steps)

01Blenderize tofu, lemon juice and sugar.
02Add lemon peel.
03Fold in thawed whipped topping.
04Brush graham cracker crust with slightly beaten egg white. Bake at 375 degrees F for 5 minutes.
05Allow crust to cool.
06Pour lemon filling into cooled pie crust. Chill.
