4 -6 medium potatoes, quartered (skins on or off, your choice)potato
1/4 cup mazola oiloil
1/2 cup butter, meltedbutter
1/2 teaspoon oreganooregano
1 teaspoon saltsalt
1/4 teaspoon pepperpepper

Instructions (11 steps)

01Preheat oven to 400 degrees.
02In a large pan, lay quartered potatoes so they barely touch one another.
03Combine butter and oil in a bowl and mix with a fork.
04Pour over potatoes.
05Toss potatoes around until very well coated with oil and butter mixture.
06Be sure potatoes are spread around evenly in the pan.
07Allow to roast, for 20 minutes.

08Sprinkle salt, pepper, and oregano all over potatoes.

09Toss around with a spatula, spread potatoes around evenly again.

10Roast potatoes again for 15 minutes more, or until golden brown.

11If you like you can also add some lemon juice also.
