This is my variation of the many banana muffin recipes I have searched through. Very moist, texture is a little spongey, and the right amount of sweetness. Feel free to be liberal with the amount of bananas you add--you can't go wrong!

2 cups whole wheat flourflour
1 teaspoon baking sodabaking-soda
1/2 teaspoon saltsalt
1/2 teaspoon nutmegnutmeg
1 teaspoon cinnamoncinnamon
2 tablespoons olive oilolive-oil
4 tablespoons unsweetened applesauceapplesauce
1/2 cup honeyhoney
2 large bananas, mashedbanana
2 eggsegg
1/4 cup warm waterwater

Instructions (5 steps)

01Preheat 325. Use cooking spray to lightly grease your muffin pan.
02Mix dry ingredients.
03Mix oil, applesauce, honey, eggs, then, bananas.
04Add liquid ingredients to the dry ingredients gradually while adding warm water occasionally to help moisten the mixture.
