½ cup (4 oz/115 g) plus 2 ¼ cups (1 lb 2 oz oz/507 g) granulated sugarsugar
¼ cup (2 fl oz/60 ml) waterwater
1 ½ cups (10 ½ fl oz/315 ml) boiling waterwater
1 tablespoon lemon juice (, freshly squeezed)lemon

Instructions (7 steps)

01In a medium saucepan, heat ½ cup (4 oz/115 g) of sugar and ¼ cup (2 fl oz/60 ml) of water over medium-low heat until the sugar has dissolved.
02Bring to a simmer and cook until the mixture turns a deep amber color, about 8–10 minutes. If needed, brush down the sides of the pan with water to prevent crystallization.
03Add the remaining 2 ¼ cups (1 lb 2 oz/507 g) of sugar to the caramel.
04Carefully pour in the boiling water and lemon juice and whisk continuosly. The mixture will bubble rapidly. (The sugar will clump but keep whisking and those lumps will dissolve).
05Continue to simmer for 17-20 minutes, until the syrup is a rich amber color and slightly thickened.
