This is a recipe I picked up from The Cowboy Cook-Off in Abilene, Texas. It is from the "cookie" who worked for the Pitchfork Ranch in 1988. It's easy and is done overnight. Prep time does not include sitting overnight. Cook time is however fast you griddle them.

2 cups flourflour
2 cups waterwater
1 package yeastyeast
1 teaspoon sugarsugar
1 teaspoon baking sodabaking-soda
1 teaspoon saltsalt
2 eggsegg
2 tablespoons bacon grease or 2 tablespoons vegetable oiloil

Instructions (4 steps)

01Mix together flour, water, and yeast.
02Let sit overnight, covered, on counter.
03In the morning, add remaining ingredients and beat until thin.
04Cook fast on a hot, ungreased griddle.
