3 slices baconbacon
1/4 cup onion, Choppedonion
1 tablespoon unbleached flourflour
2 teaspoons sugarsugar
3/4 teaspoon saltsalt
1/4 teaspoon celery seedcelery-seed
1/4 teaspoon pepperpepper
3/8 cup waterwater
2 1/2 tablespoons vinegarvinegar

Instructions (11 steps)

01Peel potatoes and slice paper thin.
02Saute bacon slowly in a frypan, then drain on paper towels.
03Saute onion in bacon fat until golden brown.
04Blend in flour, sugar, salt, celery seeds, and pepper.
05Cook over low heat, stirring until smooth and bubbly.

Remove from heat.

07Stir in water and vinegar.

08Heat to boiling, stirring constantly.

09Boil for 1 minute.

10Carefully stir in the potatoes and crumbled bacon bits.

11Remove from heat, cover and let stand until ready to serve.
