1 lb boneless skinless chicken breast (cubed)chicken
2 teaspoons saltsalt
1 onion, choppedonion
4 garlic cloves, choppedgarlic
2 carrots, slicedcarrot
2 stalks celery, slicedcelery
1 tablespoon gingerroot, minced fresh
1 teaspoon paprikapaprika
1 teaspoon ground cumincumin
1 teaspoon dried oreganooregano
1/2 teaspoon ground cayenne pepperpepper
1/2 teaspoon ground turmericturmeric
1 1/2 cups chicken brothchicken-broth
2 tomatoes, choppedtomato
1 cup canned chick-peas, drained
1 zucchini, slicedzucchini
1 1/2 tablespoons lemon juicelemon-juice

Instructions (10 steps)

01Season chicken with salt.
02Brown in a large saucepan over medium heat until almost cooked through.

03Remove chicken from pan and set aside.

04Saute onion, garlic, carrots and celery in same pan.

05When tender, stir in ginger, paprika, cumin, oregano, cayenne pepper and turmeric.

06Stir fry for about 1 minute.

07Mix in broth and tomatoes.

08Return chicken to pan, reduce heat to low and simmer for about 10 minutes.

09Add chickpeas and zucchini to pan and bring to simmering once again.

10Cover pan and cook for about 15 minutes, or until zucchini is cooked through and tender. Stir in lemon juice and serve.
