2 cups shredded zucchinizucchini
1 cup vegetable oilvegetable-oil
8 ounces crushed pineapple, drainedpineapple
2 teaspoons vanillavanilla
3 cups flourflour
2 cups sugarsugar
2 teaspoons baking sodabaking-soda
1 teaspoon cinnamoncinnamon
1 teaspoon saltsalt
1/2 teaspoon nutmegnutmeg
1/2 teaspoon baking powderbaking-powder
1 cup chopped pecanspecan
1 cup raisins (optional)

Instructions (5 steps)

01In lg bowl, mix the eggs, zucchini, oil, pineapple and vanilla.
02Mix dry ingredients; add to egg mixture just until moistened through.
03Pour into 2 greased and floured loaf pans.

Bake at 350° for 60 minutes or until pick comes out clean.

05Cool 10 minutes before removing from pans.
