1 cup oiloil
2 cups sugarsugar
2 teaspoons vanillavanilla
2 cups shredded zucchini (squeezed dry in paper towel)zucchini
8 ounces crushed pineapple (drained)pineapple
3 cups flourflour
1 teaspoon baking sodabaking-soda
1 teaspoon saltsalt
1/2 teaspoon baking powderbaking-powder
2 teaspoons cinnamoncinnamon
1 cup raisinsraisins
1 cup chopped nutschopped-nuts

Instructions (8 steps)

01Beat the eggs, oil, sugar and vanilla until light and fluffy.
02Stir in zucchini and pineapple.
03Combine dry ingredients and add to batter.
04Pour in nuts and raisins and stir.

Pour batter into 2 well-greased loaf pans.

06Bake at 350°F for 1 hour or until firm.

07Cool in pan for 10 minutes.

08Freezes beautifully.
