01Use a peeler to peel just the yellow part of the skin from one lemon, not the white part (notes).
02Juice enough lemons to reach one cup of strained lemon juice.
03Add the peel of one lemon, the one cup of lemon juice and the cup of sugar to a large heavy-based saucepan over medium heat.
04Bring the mixture slowly to a boil, while stirring, to dissolve the sugar then boil for one minute. This is good for cocktails or cakes.For a thicker lemon syrup, let it boil away, stirring only every now and then, until it starts to thicken and starts reducing. With a darker colour and the thickness of maple syrup, this is great for serving over desserts and pancakes. You can reduce it further if you like to suit your intended use and the more it reduces the more intense the lemon flavour becomes.
05Strain the peel out of the syrup, then pour into sterilised bottles.
