2/3 cup finely chopped parsley (, flat leaf is best if you can find it)parsley
1/2 cup finely diced green onionscallion
3/4 cup uncooked bulgur (, soaked in warm water until aldente)bulgur
1/4 cup finely chopped of fresh mintmint
2 lemons, juice oflemon
3 -4 tablespoons olive oilolive-oil
kosher saltsalt
fresh ground pepperpepper
1 tablespoon red wine vinegarred-wine-vinegar

Instructions (3 steps)

01combine all ingredients and let stand at room temp.
02for an hour or so to allow flavors to blend.
03serve with pitas.
