3/4 cup chopped oniononion
1 (16 ounce) can kidney beans, rinsed and drainedkidney-beans
1 (14 1/2 ounce) can diced tomatoes, undrainedtomato
1/2 cup uncooked instant riceinstant-rice
1/2 cup waterwater
3 tablespoons chopped green bell peppersbell-pepper
2 teaspoons chili powderchili-powder
1/2 teaspoon garlic saltsalt

1 cup corn chipscorn-chips
1 1/2 cups shredded cheddar cheesecheddar

Instructions (7 steps)

01In a skillet, cook beef and onion until meat is browned; drain.
02Add next 8 ingredients; mix well.
03Bring to a boil.
04Reduce heat; cover and simmer for 20 minutes, stirring occasionally.

05Remove from the heat.

06Sprinkle with the corn chips and cheese.

07Cover and let stand for 3 minutes or until cheese is melted.
