2 egg yolksegg
1/2 teaspoon saltsalt
1 tablespoon powdered sugarsugar
3 tablespoons lemon juice or 3 tablespoons vinegarvinegar
1 1/2 cups oiloil
1 1/2 tablespoons flour or 1 1/2 tablespoons cornstarchcornstarch
1 teaspoon dry mustardmustard
1/2 cup boiling waterwater
2 tablespoons vinegarvinegar

Instructions (7 steps)

01Using a blender or electric mixer, blend egg yolks, salt, sugar and 1 tablespoons of the lemon juice.
02Slowly pour in 1 cup oil, a few drops at a time, mixing thoroughly.
03Add remaining 1/2 cup oil a little faster, carefully blending in each bit before adding the remaining 2 tablespoons lemon juice.
04Mix the flour, mustard, boiling water and vinegar together until smooth.
