2 3/4 cups flourflour
1 1/2 cups brown sugarbrown-sugar
1 teaspoon baking sodabaking-soda
1 teaspoon saltsalt
1 eggegg
1 cup buttermilkbuttermilk
1/2 cup oiloil
1 teaspoon vanillavanilla
1 cup chopped rhubarbrhubarb
2 tablespoons flourflour
2 -3 teaspoons margarinemargarine
2 -3 teaspoons sugarsugar
1/2 teaspoon cinnamoncinnamon

Instructions (11 steps)

01Grease and flour two bread tins.
02Prheat oven to 325 degrees F.
03Coat rhubarb w/ 2 tablespoons flour.
04Combine flour, sugar, baking soda and salt in a large bowl.

In separate bowl, combine egg, buttermilk, oil and vanilla.

06Mix well and stir into dry ingredients.

07Fold rhubarb into batter.

08Pour into bread pans.

09Sprinkle with topping mixture.

10Bake for 55 minutes or until toothpick comes out clean.

11Serve with strawberry preserves.
