01Melt the butter and mince the parsley.
02Scrub the potatoes and cut in half or quarters if large. If small, you can optionally peel away a strip in the center.
03Bring one inch of water in a saucepan large enough to hold the potatoes to a boil over high heat. Add the potatoes in a steamer basket, cover with a lid and steam for about 15 minutes. Check for doneness by using a skewer. They should be tender, but not falling apart.
04Remove the potatoes from the basket and toss with the butter and parsley. Taste and add salt and pepper to taste.
